# The World's Finest Dining: 2023's Best Restaurants Revealed
Named the world's best restaurant for 2023, Central has led the way in putting Lima center stage on the global culinary map. This avant-garde restaurant takes a daring approach with its highly regarded tasting menus served in an elegant white dining area. Located in the famous coastal city of San Sebastián, the restaurant menu is very diverse, including from 20 to 30 dishes with different ways of preparation, mainly in the Basque terroir style with a combination of colors and flavors from different parts of the world.

For yet another year, the prestigious gastronomic contest The World’s 50 Best Restaurants has drawn up a new classification to assess the best restaurants in the world, based on the opinions of more than 1,000 international experts in the restoration industry from 26 different regions around the world.
La Liste featured three French restaurants in its top ten. France’s exclusion from the upper rungs of the World’s 50 Best has angered leading French cultural figures proud of their country’s culinary tradition. Partly in response to this disappointment, French Foreign Minister Laurent Fabius launched the new initiative to promote French tourism and fine dining.

The best restaurant globally, in Menton, France, debuted at number 35 in 2009 and has since claimed the top spot. Noma in Copenhagen, Denmark, the second best, stands out for creating new food genres and incorporating New Nordic cuisine that looks back to look ahead. The exotic Spanish cuisine enables chefs to create incredible flavors from simple ingredients, marking it as one of the top restaurants.
